Swedish Meatballs

Easy recipe that can be made in the microwave

Ingredients

  • 1 small onion, chopped
  • 1 egg
  • 1/4 c. seasoned bread crumbs
  • 2 tbsp. milk
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 1 lb. ground beef

Sauce Ingredients:

  • 1 can cream of mushroom soup 10 3/4 ounces
  • 1/2 c. sour cream
  • 1/4 c. milk
  • 1 tbsp. dried parsley flakes
  • 1/4 tsp. ground nutmeg

Instructions

  1. In a bowl, combine the first 6 ingredients. 

  2. Add beef; mix well. Shape into 1-in. meatball. Place in a shallow 1 1/2-qt. microwave-safe dish. 

  3. Cover and microwave on high for 10 minutes or until meat is no longer pink; drain.

  4. Combine the sauce ingredients; pour over the meatballs. Cover and cook on high for 7-8 minutes or until heated through. 

  5. Serve over noodles.
