Santa’s Surprises Cookies

  • 2 sticks butter softened
  • 1 cup creamy peanut butter
  • 1 cup brown sugar
  • 1 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 3 1/2 cups flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • Miniature candy bars Snickers, Reese's Peanut Butter Cups or Hershey Kisses
  • Chocolate for drizzling

  1. Combine butter, peanut butter, brown sugar, and sugar.
  2. Beat until fluffy.
  3. Add eggs and vanilla. Mix.
  4. Add flour, salt, and baking soda.
  5. Cover and chill dough for 2-3 hours.
  6. Unwrap 13 oz. package Snickers Brand Miniatures. (My recipe made about 55-60 cookies. I was careful to only use 1 Tablespoon of dough per cookie.)
  7. Divide chilled dough into 1 tablespoon pieces and flatten. Place a miniature in the center of each piece of dough. Form the dough into a ball around each miniature. Place on greased cookie sheet and bake at 325° for 10-12 minutes. (I was in a hurry and did it at 350°. The cookies were fine.)
  8. Holiday hint: Spruce up Santa's surprises by drizzling melted chocolate or chocolate frosting over the top of each cookie. (I used milk chocolate almond bark from Aldis.)
