Turkey Lasagna Florentine

Ingredients

  • 9 lasagna noodles
  • 1 cup chopped broccoli or spinach
  • 2-3 cups chopped diced chicken or turkey (cooked)
  • 2 cups American or cheddar cheese
  • 1 can of cream of mushroom soup
  • 1 cup sour cream
  • 1/2 cup mushrooms optional
  • 1 small diced yellow onion
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Cook lasagna, drain, and lay flat on wax paper.
  2. Cook broccoli and drain well. After cooking it, I like to put it in my food chopper so that the broccoli is very fine.
  3. Combine turkey (or chicken), 1 1/2 c. cheese, sour cream, cream of mushroom soup, onion, salt, pepper, and broccoli.
  4. Butter the bottom of a 12" by 8" pan (or 13" x 9" pan).
  5. Put 3 lasagna pieces on the bottom.
  6. Spread 1/2 of the turkey/chicken mixture, then sprinkle with 2 tablespoons of Parmesan cheese.
  7. Layer again and end up with cheese on top.
  8. Bake at 350° for 30 minutes.
  9. Remove foil and bake 10 minutes more until brown and bubbly.
  10. Let stand for 15 minutes before cutting.
