How to make Watermelon Cake Balls -- perfect for summer parties!

Watermelon Cake Balls

Ingredients

  • 1 pink cake you can buy a watermelon/strawberry/cherry cake mix or make a yellow or white cake and die it pink with food gel or coloring
  • 1 recipe of your favorite frosting cream cheese is my favorite to use because it is sturdy
  • 3/4 cup mini chocolate chips
  • 24 oz white candy melts or almond bark
  • 24 oz  green candy melts 

Instructions

  1. Crumble your cake and stir in the frosting until it becomes a mostly uniform mixture.
  2. Fold in the chocolate chips.
  3. Form into oblong, watermelon shaped balls and place on wax paper lined pans.  
  4. Freeze for at least an hour.
  5. Melt white candy coating in double boiler or microwave until smooth, being sure not to overcook it.
  6. Take a few cake balls out of the freezer at a time and dip into white candy coating.  Place back on wax paper until completely set.
  7. Repeat process of melting and dipping cake balls in green candy coating. 
  8. Make sure they are completely hardened before transferring to an airtight container for storage.
