Secretly Healthy Mint Chip Popsicles


  • 1 cup Greek Yogurt
  • 1 cup Whole Milk
  • Stevia to taste or honey
  • 1 tsp mint extract
  • ½ cup of mini chocolate chips or homemade chocolate chunks see below
  • ½ cup defrosted frozen spinach squeezed to release most of the water.


How to make dairy-free, sugar-free Chocolate Chunks:

  1. Combine ½ cup coconut oil and ½ cocoa powder (or melted unsweetened chocolate) until fully incorporated. (heat a bit if the coconut oil is too hard)
  2. Add in stevia, honey, or maple syrup to desired sweetness or omit for very dark chocolate chunks.
  3. Pour onto a parchment lined plate and place in freezer until solid - 10 -15 minutes. Remove and chop to desired size. Store in a container in freezer.

How to make popsicles:

  1. Add spinach and milk to blender and blend until completely smooth.
  2. Pour into a bowl and mix in the rest of the ingredients.
  3. Spoon mixture into popsicle molds, making sure to evenly disperse the chips.
  4. Freeze until solid and enjoy!
