This easy crock-pot meals is perfect for busy days. My kids and husband loved it! Cheesy potatoes and carrots along with chicken make it a complete meal.

Crock-Pot Cheesy Scalloped Potatoes and Chicken


  • 1/2 cup chopped onions
  • diced Velveeta cheese 1 1/2 cups or as much cheese to your liking
  • 7-8 medium potatoes sliced
  • salt to taste
  • 10 3/4 oz. can of cream of chicken soup
  • 1 soup can milk
  • 3-4 whole boneless skinless chicken breasts


  1. Place layers of onions, cheese, potatoes in slow cooker.
  2. Place chicken breasts on top of potatoes.
  3. Combine soup and milk and pour into slow cooker, pushing meat into liquid.
  4. Cover. Cook on high for 1 1/2 hours. Reduce temperature to low and cook 3-4 hours. Test and see if potatoes are done (mine were not.) If not, continue cooking on low another hour and test again, continuing to cook until potatoes are finished.
