Easy to make Lemon Crumb Bars!

Lemon Crumb Bars


  • 1 regular size lemon or yellow cake mix I used lemon.
  • 1/2 cup 1 stick butter or margarine, softened
  • 1 egg
  • 2 cups finely crushed saltine crackers
  • 1 14 ounce can sweetened condensed milk
  • 1/2 cup lemon juice
  • 3 egg yolks


  1. Preheat oven to 350°.
  2. In large bowl, combine cake mix, butter, and 1 egg with mixer until crumbly.
  3. Stir in cracker crumbs.
  4. Reserve 2 cups crumb mixture.
  5. Press remaining crumb mixture firmly on bottom of greased 13x9-inch baking pan.
  6. Bake 15-20 minutes or until golden.
  7. With mixer or wire whisk, beat sweetened condensed milk, lemon juice, and 3 egg yolks. Spread evenly over prepared crust.
  8. Top with reserved crumb mixture.
  9. Bake 20 minutes longer or until set and top is golden.
  10. Cool. Cut into bars. Store leftovers covered in refrigerator.
