Ooey-Gooey Caramel Peanut Butter Bars


  • 1 package yellow cake mix
  • 1 cup uncooked old-fashioned oats We used quick-cooking oats.
  • 2/3 cup creamy peanut butter
  • 1 egg slightly beaten
  • 2 tablespoons milk
  • 1 package 8 ounces cream cheese, softened
  • 1 jar about 12 ounces caramel ice cream topping
  • 1 cup semisweet chocolate chips


  1. Preheat oven to 350°.
  2. Lightly grease 13" x 9" baking pan.
  3. Combine cake mix and oats in a large bowl. Cut in peanut butter with pastry blender or two knives until mixture is crumbly.
  4. Blend egg and milk in small bowl. Add to peanut butter mixture; stir just until combined. Reserve 1 1/2 cups mixture. Press remaining peanut butter mixture into prepared pan.
  5. Beat cream cheese in small bowl with electric mixer at medium speed until fluffy. Add caramel topping; beat until just combined. Carefully spread over peanut butter layer in pan.
  6. Break up reserved peanut butter mixture into small pieces; sprinkle over cream cheese layer. Sprinkle with chocolate chips.
  7. Bake 30 minutes or until nearly set in center. Cool completely in pan.
