Chocolate Zucchini Cake

Rich moist chocolate cake that includes shredded zucchini

Ingredients

  • 1/2 cup shortening
  • 1 1/2 cup sugar
  • 2 or 3 eggs
  • 1/2 tsp. salt
  • 1 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1/2 tsp. cinnamon
  • 1/2 tsp. nutmeg optional
  • 4 tbsp. cocoa
  • 2 1/4 cup flour
  • 1/2 cup canola oil
  • 2 cups grated zucchini
  • 6 oz. chocolate chips
  • 1/2 cup sour milk

Instructions

  1. Cream together first 3 ingredients (shortening, sugar and eggs).

  2. Add all other ingredients, alternately with the last ingredient, the sour milk. 

  3. Bake at 325° for 45 minutes or until done.

Recipe Notes

If you do not have sour milk on hand, you can add 1/2 -1 tsp of lemon juice or vinegar to 1/2 cup of milk. Let it sit for a couple of minutes before adding it to the recipe.
