Black Bean, Corn, and Cilantro Salsa


  • One 16 ounce bag of frozen corn.
  • 2 15 ounce cans black beans
  • 3 roma tomatoes
  • 1 bunch cilantro
  • 1/3 of a large red onion
  • 1 red bell pepper
  • 1 tablespoon minced garlic
  • 1/4 cup lime juice --I think I used the juice of 3 limes. I started with 2 but then added another--do it to your taste!
  • 2 tablespoons olive oil or to taste
  • Salt to taste


  1. Cook and drain corn.
  2. Drain and rinse black beans.
  3. De-seed and chop tomatoes.
  4. Finely chop cilantro and 1/3 of a red onion.
  5. Remove seeds from red bell pepper and chop it.
  6. Mince garlic (or measure the garlic if you buy it in a jar.)
  7. Squeeze limes.
  8. Add all the above ingredients plus olive oil and salt.
  9. Lightly mix all ingredients and refrigerate until you are ready to serve. This could be served as a salad or as a salsa with tortilla chips.

Recipe Notes

You could add 5 green onions, finely sliced, but I didn't have any. Also, you could add any of the yellow or orange sweet peppers. If you wanted more kick, you could add a jalapeno pepper.
