Apple Streusel Muffins

Ingredients

Muffin ingredients:

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 eggs
  • 1/2 cup butter melted
  • 1-1/4 teaspoons vanilla extract
  • 1-1/2 cups chopped peeled tart apples--I put mine in the processor and chopped them fine.
  • STREUSEL TOPPING:
  • 1/3 cup packed brown sugar
  • 1 tablespoon all-purpose flour
  • 1/8 teaspoon ground cinnamon
  • 1 tablespoon cold butter

Glaze ingredients:

  • 1-1/2 cups confectioners' sugar
  • 1 to 2 tablespoons milk
  • 1 teaspoon butter melted
  • 1/4 teaspoon vanilla extract
  • 1/8 teaspoon salt

Instructions

  1. In a large bowl, combine the flour, sugar, baking powder, baking soda and salt.
  2. In another bowl, combine the eggs, butter and vanilla; stir into dry ingredients just until moistened (batter will be stiff). Fold in apples.
  3. Fill greased or paper-lined muffin cups three-fourths full.
  4. In a small bowl, combine the brown sugar, flour and cinnamon; cut in butter until crumbly. Sprinkle over batter.
  5. Bake at 375° for 15-20 minutes or until a toothpick inserted near the center comes out clean.
  6. Cool for 5 minutes before removing from pan to a wire rack to cool completely.
  7. Combine glaze ingredients; drizzle over muffins. Yield: 1 dozen
