Delicious blueberry muffins with a crumb topping!

Sweet Blueberry Muffins

Ingredients

*Batter:*

  • 2 eggs
  • 1 cup milk
  • 1/2 cup cooking oil
  • 3 cups flour
  • 1 cup sugar
  • 4 teaspooons baking powder
  • 1 teaspoon salt
  • 2 cups fresh or frozen blueberries

*Crumb topping:*

  • 1 cup flour
  • 1/2 cup sugar
  • 1/4 cup butter

Instructions

  1. To prepare the batter, combine eggs, milk, and oil in a bowl.
  2. In a separate bowl, combine flour, sugar, baking powder, and salt.
  3. Stir dry ingredients into the wet ingredients until just moistened. Fold in blueberries.
  4. Spoon batter into 24 lined muffin cups
  5. To prepare crumbs, cut the butter into the flour and sugar.
  6. Sprinkle crumbs over each muffin.
  7. Bake at 400° for 20-30 minutes until a toothpick comes out clean after being inserted into the middle of a muffin.
