I have already shared many of our favorite recipes. Today, I flipped through our family’s recipe book to see what I could make with the ingredients I had at home.
I found this recipe for Swedish Meatballs that I hadn’t made in a long time!
I really don’t know why I haven’t made this recipe more as it is super easy — and it can be done in the microwave which was nice on our 82 degree day. Since I live in Florida, 82 degrees is very nice. But our house was 77 degrees, and I didn’t want to turn the oven on as the air conditioning was turned off. This microwave main dish paired with noodles or rice will allow you to keep the oven turned off!
These Swedish meatballs are supposed to be made with ground beef, but all I had was ground turkey, and we loved them!
Here is how you make Swedish Meatballs:
Mix together:
- 1 small onion, chopped
- 1 egg
- 1/4 c. seasoned bread crumbs
- 2 T. milk
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 1 lb. ground beef
Shape into 1-in. meatballs.
Place in a shallow 1 1/2-qt. microwave-safe dish.
Cover and microwave on high for 10 minutes or until meat is no longer pink; drain.
Combine the sauce ingredients:
- 1 can (10 3/4 oz.) condensed cream of mushroom soup, undiluted
- 1/2 c. sour cream
- 1/4 c. milk
- 1 T. dried parsley flakes
- 1/4 tsp. ground nutmeg, optional
Cover and cook on high for 7-8 minutes or until heated through.
Serve over noodles.

Easy recipe that can be made in the microwave
- 1 small onion, chopped
- 1 egg
- 1/4 c. seasoned bread crumbs
- 2 tbsp. milk
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 1 lb. ground beef
- 1 can cream of mushroom soup 10 3/4 ounces
- 1/2 c. sour cream
- 1/4 c. milk
- 1 tbsp. dried parsley flakes
- 1/4 tsp. ground nutmeg

In a bowl, combine the first 6 ingredients.

Add beef; mix well. Shape into 1-in. meatball. Place in a shallow 1 1/2-qt. microwave-safe dish.

Cover and microwave on high for 10 minutes or until meat is no longer pink; drain.

Combine the sauce ingredients; pour over the meatballs. Cover and cook on high for 7-8 minutes or until heated through.

Serve over noodles.
