In the past month and a half, we did our cross-country move to Florida, unpacked, and ordered books for school. We have been trying to get to know people; I have been teaching 2 kids Math over the past month; the kids have had fun swimming; I signed up 3 kids for a recreational swim team the next 2 weeks; and school physicals have been scheduled. Our contract fell through on the sale of our house; and as of tomorrow, it will be back on the market in Illinois. Because of this, I have lost some of my blogging enthusiasm this summer. I have kept Creative K Kids going with the three posts a week: Tasty Tuesdays, Thoughtful Thursdays, and The Ultimate Pinterest Party. I am so thankful for the guest posts on Tasty Tuesdays. I wouldn’t have been able to keep this party going without the guest posts and without my great hosts. Alas, my guests posts are done . . . unless one of you want to do a guest post for me! I did not think it would take so long to get back in a rhythm, but I am still not there. I did take a couple pictures of some recipes I made while my mom was here, so I do have something to fall back on. However, if you would like to do a guest post, just fill out THIS FORM, and I’ll get back to you! I could put you on any Tuesday in August or September (except for the first Tuesday). Hello! Today I am so excited to be hanging out with you all! I’m Morgan and I write over at Morgan Manages Mommyhood where I share parenting and blogging advice, recipes, and the occasional DIY. I’m a momma to 2 boys, ages 2 and 4 months, so life can be a little on the hectic side!
I’m pretty passionate about feeding kids well – which doesn’t necessarily mean completely skipping out on treats! While the occasional fun indulgence while we are out is totally okay with us, (hello ice cream!) I try to keep the treats we give our toddler a little healthier. I try to keep as much as possible sugar free since personally my body reacts badly to it and let’s be honest – sugar isn’t the greatest for anyone, much less a growing toddler.
Recently, I’ve been creating a ton of fun sugar-free popsicles, with flavors like creamsicle or pina colada, but one of my true loves is mint chip. So I took to the kitchen to try and figure out a way to make a sugar free version that I would happily give to my toddler and after a few tries, I hit the nail on the head!
These Secretly Healthy Mint Chip Popsicles are made with whole ingredients like whole milk and Greek yogurt, sweetened with stevia (or your choice of healthy sweetened – honey is also a great option!) and – surprise! – the green color comes from spinach! Your kiddos will NEVER know it’s in there, as the mint flavoring is strong enough to cover any small flavors, but if you think the color will throw them off feel free to omit it.
I made my own chocolate chunks since I was striving for totally sugar free, but feel free to use chopped chocolate bars, mini chips, normal chips – whatever you have on hand. I hope you enjoy!!

- 1 cup Greek Yogurt
- 1 cup Whole Milk
- Stevia to taste or honey
- 1 tsp mint extract
- ½ cup of mini chocolate chips or homemade chocolate chunks see below
- ½ cup defrosted frozen spinach squeezed to release most of the water.

Combine ½ cup coconut oil and ½ cocoa powder (or melted unsweetened chocolate) until fully incorporated. (heat a bit if the coconut oil is too hard)

Add in stevia, honey, or maple syrup to desired sweetness or omit for very dark chocolate chunks.

Pour onto a parchment lined plate and place in freezer until solid - 10 -15 minutes. Remove and chop to desired size. Store in a container in freezer.

Add spinach and milk to blender and blend until completely smooth.

Pour into a bowl and mix in the rest of the ingredients.

Spoon mixture into popsicle molds, making sure to evenly disperse the chips.

Freeze until solid and enjoy!
