This recipe is one of the easiest recipes you will ever make!
Poor Man’s Chop Suey is another recipe I grew up eating as it is kid-friendly, easy to prepare, and cheap! My mom would cook a chicken for our Sunday meal. There was always some chicken left which would be cut up and saved for her inexpensive casseroles as we were on a very limited budget. The 2 cups of chicken plus rice, canned soup, and soy sauce made this an inexpensive, yet filling, meal.
My kids also love this meal. Since my husband is 1/2 Asian, rice and soy sauce are a staple in our house. It does take a while to cook, so you have to plan ahead for the cooking time. Last time I made it, I hiked the temperature up to 400 degrees, and it was done in 1 hour.
It’s not a beautiful main dish, but my kids are happy when I make it!
- 2 cups meat
- 3/4 cup rice
- 1 can of cream of mushroom soup
- 1 can of cream of chicken soup
- 2 cans of water
- 4 Tablespoons soy sauce

Mix all ingredients together.

Put in oven for 1 1/2 hours at 350 degrees (watch closely, stir occasionally).

why this post made me smile! We did chop suey too when we were young! I still cook it with my own family. I am a Filipina and my kids are half Caucasian. So they are familiar with the dish as well.
