Friendship Cookies have been a favorite of our family for the past few years.
In honor of St. Patrick’s Day, I switched the white chips out with some white and green baking chips that I had. However, these cookies can be made all year long. I was having too much fun thinking of St. Patrick’s Day ideas after researching the history of St. Patrick’s Day and coming up with Minute to Win It Games for St. Patrick’s Day.
These cookies are rather easy to make. Here is the recipe:
- 1/4 cup shortening
- 1 cup sugar
- 1/2 cup brown sugar packed
- 1/2 cup butter
- 2 1/4 cup flour
- 1/2 teaspoon salt
- 2 teaspoons baking soda
- 2 eggs
- 2 teaspoons vanilla
- 1/2 cup oatmeal
- 1 cup chocolate chips
- 2/3 cup white vanilla chips
- 1/3 cup butterscotch chips
- 3/4 cup chopped walnuts if desired
Cream together shortening, sugars, and butter.
Add flour, salt, and soda.
Then add eggs, vanilla, and oatmeal.
Finally stir in baking chips and walnuts if desired. ( I do not usually add the walnuts.)
Drop by tablespoonfuls on ungreased cookie sheets.
Bake at 375° for 8-10 minutes until golden brown.
