I had two heads of cabbage in my refrigerator that I had bought to do the St. Patrick’s Day Minute to Win It Games. So I decided to make the only coleslaw I really like: Crunchy Potato Chip Coleslaw.
This salad/coleslaw is super easy to make, and I love the taste as it has tuna fish mixed into the coleslaw and a sprinkle of potato chips on top!
I use my food chopper to chop my carrots and cabbage, so it is very easy to prepare. I only sprinkle some chips on top of individual servings of coleslaw as then the chips don’t get soggy if there is any leftover. If you know it will all be eaten, then you can do the chips according to the directions.
Also, I use different kinds of potato chips. Usually I use plain chips, but this time, I only had cheese-flavored Pringles on hand, so that is what I used!

- 1 cup mayonnaise I use Miracle Whip.
- 2 Tablespoons vinegar
- 2 cups finely shredded cabbage
- 1 can 6 1/2 oz. tuna (drained)
- 1/3 cup shredded carrot
- 1/3 cup chopped green onion optional--green pepper is not my favorite
- 2 Tablespoons minced onion
- 2 1/2 cups potato chips I don't use this much-- I crush some and add a layer to the top of individual servings.
In a medium bowl, combine mayonnaise and vinegar. (I use my four cup glass measuring cup to mix all the ingredients except the chips.)
Stir in cabbage, tuna, carrot, green pepper, and onion.
Just before serving, add chips. Toss lightly.
