Those of you who read all my posts know how this year has been full of changes for our family. I went back to work full-time after staying at home since my first child was born; we changed churches and schools; we moved to a new house; and in June, we are moving cross-country away from family and friends to begin our lives in a new ministry, a new school, and a new house. That will be two moves of schools, churches, ministries, houses, and jobs in less than a year!
These changes would be overwhelming to anyone. How can we keep sanity and normalcy in our lives? I do not promise to have all the answers, and there have been days that have been hard; but the one habit that has helped our family to be able to weather all the changes is having family dinners together.
Family mealtimes are a crucial time for us all to come together, talk, and find some calm in our day. As we eat some of the same meals that we have always eaten, life doesn’t seem so different. We are healthy, all together as a family, and we have food on our table. Life is good!
However, cooking for those dinners has also proven to be a challenge for me this year. Grocery shopping has been streamlined. One store usually has to suffice for the week. Easy meals are a must. Yet we have seen that the easiest meals are the favorites, and that the family dinners are worth the time spent making our dinners possible.

See how I used Signature products to make Alfredo with Chicken Strips:
- 1 pound Signature penne
- 1 cup heavy cream
- 1/2 cup butter
- 1/2 cup Signature Parmesan cheese
- 1/4 cup fresh parsley optional
- 1 teaspoon salt optional
- 1/4 teaspoon pepper
- 1/4 teaspoon Signature garlic powder
- 1 egg
- 1 cup Signature Italian Bread crumbs
- 1/4 cup Signature Parmesan cheese
- 1/4 teaspoon Signature garlic powder
- 2 Tablespoons Canola or olive oil
Prepare penne according to package directions. Drain.
In a large pan, heat cream and butter on low heat Do not boil
Add penne, Parmesan cheese, parsley, salt, pepper, and garlic powder.
Toss gently to coat.
Cut chicken into strips.
Prepare an egg wash to dip the chicken in. (1 egg and 1 Tablespoon water beat together.)
Mix bread crumbs, Parmesan cheese, and garlic powder in another dish.
Dip chicken in egg wash, then in bread crumbs mixture.
Cook breaded chicken in oil in a skillet. Turn chicken over periodically to make sure all of chicken is cooked.
Place on top of Mostaccioli Alfredo.
I even used some Signature brand black olives for our salad!
