Last week, I had family staying at my house, and the women were going to go off and leave the men and all the children to fend for themselves. They do a very good job at this–as long as there is an amply supply of food.
I had sandwich makings, fruit, and chips, but I wanted to give them dessert as well; so I quickly prepared a summer favorite: No Bake Oatmeal Cookies! One reason they are a summer favorite is because you do not have to bake them in the oven. For those hot summer days, who wants to have a hot house? I also like them because they can be prepared very quickly, although you do have to allow time for the cookies to cool and get firm on the cookie sheets.
All you have to do is combine the ingredients in a pan on the stove,
and then drop the mixture by tablespoons on a cookie sheet. Let the cookies cool until they are firm and can be removed from the pan. On a very hot day, you may have to refrigerate the cookies for a while.
I love the taste of these–they are one of my favorite cookies. My husband says they are too sweet, so if you are a sweets lover, you will probably like the cookies!
- 1/2 cup butter
- 1/2 cup milk
- 2 cups sugar
- 4 Tablespoons cocoa
- 3/4 cup peanut butter
- 1 teaspoon vanilla
- 3 cups quick oatmeal
- Drop by tablespoonfuls onto ungreased cookie sheets. Let cool.
